I must admit, I love traditional ice cream, heck I love just about all dairy products. However, I know having excess amounts of sugar and heavy cream isn’t the best thing for you. That’s why I love this recipe! It has all the wonderful satisfying qualities of a great ice cream with so much less sugar, fat and calories!
The other amazing thing about this recipe is – kids love it, and since it’s made with all natural healthy ingredients I don’t have to feel guilty about letting them have it! Nice cream is vegan, WFPB friendly, no added sweeteners or processed sugars, and best of all – delicious!
Banana Nice Cream
- 4 banana’s sliced and frozen
- 1-2 tsp vanilla extract
- 6 frozen strawberries diced (optional)
- 1/4 – 1/2 dark chocolate chips (optional)
Peel and slice 4 bananas, place in single layer on a parchment lined cookie sheet and freeze. Place frozen banana’s into a food processor or high preferred blender and blend until almost smooth. Add vanilla extract and blend until silky smooth. At this point you can eat a delicious banana vanilla ice cream or you can add additional ingredients. Today we added strawberries and dark chocolate chips and then blended in the food processor until just combined. It turned out delicious and Lion and Bear loved it!
Other wonderful options for this recipe – if you love other flavors and want a smooth nice cream simply add the flavor at the end and blend until smooth. If you want a fruit flavor such as cherry or peach it works best to add frozen fruit or mostly frozen to keep your nice cream from thawing to quickly. Adding different flavor extracts such as almond or pistachio can change the profile completely – and add a whole world of flavor options.
We love nice cream and hope you’ll give it a try. From all of us here in the Wee Laird’s Kitchen – good health and happy cooking!
