Paleo Chocolate Chip Cookies

What’s better after a long (unintentional) break from blogging than….COOKIES!?! I spend a fairly decent amount of time attempting to plan, prep, and execute healthy meals. Some days I am successful – other days we have breakfast for dinner, or brinner as we call it. With all of this planning, prepping, stressing, moderately successful executions – my kitchen (most days) is less than shiny. This small hurdle however is brilliantly overcome when you make an unplanned visit to Grammie’s house over the weekend. On our most recent visit Lion made quick work of asking Grammie if they could make something together, and I was happy to stand behind the camera to capture all the fun.

First things first – these Paleo Chocolate Chip Cookies are ridiculously good! If I’m honest, I think I might like them more than traditional chocolate chip cookies. The subtle coconut flavor from the oil, the delightful texture of the almond flour, and the traditional delicate floral note from the vanilla make these a real winner! If you aren’t tempted by that description or the video above consider this – not only do I think they taste better than the original – they’re better for you! They may not be health food, but I certainly feel less guilty after a nice large indulgent serving of these!
